Hamburger Bean Casserole

Dutch OvenUp north in Minnesota, we don’t call this a ‘casserole’, we call it a ‘hotdish’, but that’s a whole other topic of discussion.  It doesn’t matter what you call it though, this is a deliciously hearty meal that is very satisfying after a long day of hiking, biking or exploring while camping.

1 lb. ground beef
1 small onion, chopped
2 cans baked beans (15 oz)
1/2 cup barbecue sauce
1 package of fully cooked bacon
Shredded cheddar cheese
Refrigerated biscuit dough
Salt and Pepper

Cook the hamburger and onion in a large skillet or dutch oven over medium heat until onion is tender and hamburger is done.

Drain excess fat and add salt and pepper.

Break the bacon into bits and add to the ground beef.

Add beans and barbecue sauce and bring to a boil.

Move the skillet or dutch oven so that it will be over medium low heat.

Arrange the biscuits side by side over the top of the hamburger mixture.

Cover and simmer for about 10 minutes or until the biscuits are done.

Sprinkle cheddar cheese on top and you are ready to enjoy!
