Egg Casserole

This hearty breakfast is both easy to make and delicious.   You can prepare the recipe ‘as is’ or if you are feeling adventurous, you can add in your favorite meats and vegetables.

Ingredients:
2 Potatoes, diced
3 Tbs Vegetable oil
1/4 C Green Onion, diced
8 Eggs
1/2 C Cheddar Cheese, shredded
Salt and Pepper to taste

Instructions:
Heat oil in a foil pan on a grate over medium coals.
Add potatoes and cook until brown and tender.
Add eggs and onions, stirring to scramble.
Cook until eggs are set.
Top with cheese.
